    Easy 7-Layer Mediterranean Dip with Whipped Feta Cheese

    It all starts with a layer of hummus, followed by homemade whipped feta, chopped tomatoes and cucumbers and artichoke hearts and red onions and Kalamata olives. Sprinkled with a bit of black pepper and extra feta cheese and you have a very simple, easy to make (and make-ahead!) 7-layer Mediterranean dip. Serve alongside your favorite gluten free crackers or pita chips.

    It feels like I’m on a constant quest to find a fun, new, easy-to-make appetizer. This 7-layer Mediterranean dip certainly fits the requirements! I love the layers of colors with fresh veggies and Greek-inspired tastes. The whipped feta is unique and adds a nice creaminess alongside the hummus.

    How to layer the 7-layer Mediterranean dip

    Begin by spreading an 8 oz. container of hummus on a plate. Gently spread the whipped hummus on top as to not mush out the hummus. Next, add your tomatoes, cucumbers, artichoke hearts, Kalamata olives and red onion – there is no right or wrong way to layer them. You can lightly sprinkle coarse ground black pepper on top, followed with a few chunks of feta cheese. Add your favorite gluten free crackers and you’re ready to dip!

    Gluten Free Cracker Options

    I used Milton’s Gluten Free Crispy Sea Salt crackers for this 7-layer Mediterranean dip. I find Milton’s gluten free crackers are fairly easy to find these days, especially in larger packages at Costco and Sam’s Club.

    Simple Mills also makes a gluten free pita cracker with sea salt or Mediterranean herb that would be an excellent option.

    The primary base is made of goat cheese and is topped with fresh tomatoes, basil and balsamic vinegar.

    How to make ahead

    You can easily make this dip a few hours in advance, especially if you de-seed and discard tomato juices. Loosely cover in plastic wrap and refrigerate for 2-3 hours before serving.

    Easy Greek 7-Layer Appetizer Dip

    This Mediterranean dip can be made 2-3 hours ahead of time and refrigerated until ready to use.

    Ingredients

    Whipped Feta:

    • 6 oz. feta crumbles
    • 5.3 oz. container non-fat plain Greek yogurt
    • 1 garlic clove
    • 1 Tbs olive oil
    • pinch of salt and pepper

    Remainder of dip:

    • 8 oz. plain hummus (can use flavored if you like)
    • 2 large Roma tomatoes chopped, seeds and juices discarded
    • 1 English cucumber, chopped
    • ½ cup Kalamata olives, chopped in quarters
    • ½ cup artichokes hearts, chopped
    • ¼ cup finely chopped red onion

    Optional:

    • coarse ground black pepper
    • 2 Tbs crumbled feta

    Instructions

    Whipped feta dip:

    • In a food processor, combine feta crumbles, non-fat yogurt, garlic, olive oil, and salt and pepper and pulse until well-combined. The dip should be light and fluffy, approximately 1 minute. Set aside.

    Assembly of dip:

    • On a plate (I used a 5" x 12" rectangle plate), spread the hummus in an even layer across the bottom of the plate.
    • Next, gently spread the whipped feta on top of the hummus. Optional: lightly sprinkle coarse ground black pepper on top of the whipped feta.
    • Evenly distribute your chopped tomatoes on top of the whipped feta, followed by cucumber, red onions, and Kalamata olives. If desired, top with additional feta cheese crumbles.
    • Serve with your favorite gluten free crackers or pita chips.
