    Wanna know the best thing about these gluten free chocolate Reese’s Pieces cookies???  NO CHILL TIME before baking!!!  Ok, I lied.  It actually comes in the form of one of my most favorite candies – Reese’s Pieces.  Those delicious little peanut butter filled crunchy candy.

    But seriously.  No chill time.  That means straight from mixing to shaping to your oven.  Hot, delicious cookies in under 30 minutes!  Doesn’t that feel unheard of with gluten free?

    Substitutions for Reese’s Pieces

    Is peanut butter an allergen you need to avoid?  No problem!  M&M’s would work beautifully in these gluten free chocolate cookies.  In fact, I was thinking these would be cute little Valentine Day cookies with red, pink and white M&M’s paired with the chocolate cookie.

    Substitutions for Dairy

    I know dairy is a huge problem when it comes to gluten free.  While I’ve never baked these cookies dairy free, my first inclination would be to substitute the butter with a dairy free butter or coconut oil (although the coconut oil will make the cookie more crisp).  Unfortunately, Reese’s Pieces contain diary, so opt for a dairy free alternative such as UNREAL or No Whey Foods Choco No No’s (I notice these come in peppermint green and white…what a fun treat for St. Patrick’s day!!!).  If you don’t want to pay the premium for these, a dairy free chocolate chunk would be perfect.

    Do I have to use a silicone baking mat?

    No!  BUT…I find clean-up to be easier and I never have problems with cookies sticking to the pan.  It also eliminates any need for cooking spray and they’re reusable.  I’m not sure the last time I baked cookies without them!  Something basic like these work great: silicone baking mats.  Make sure to measure your baking sheets before purchasing to ensure a good fit.

    What’s the best gluten free flour blend to use?

    I never use xanthan gum in my gluten free baking.  I feel ‘glutened’ whenever I eat it!  Bloated, painful belly…totally NOT worth it!  Guar gum is my go-to, but in order to bake and cook with it I have to make my own gluten free flour blend.

    I’ve been using this blend for well over 6 years now and every time I try something different I always go back to this one: Amy’s gluten free flour blend.  I used this blend in these gluten free chocolate Reese’s Pieces cookies.

    I completely understand the time and space issue with making your own gluten free flour blend.  It takes time and extra work, and we all know being gluten free alone takes its own effort!  If that’s not an option for you try one of these gluten free flour blends: King Arthur Gluten Free Measure for Measure or Bob’s Red Mill Gluten Free 1 to 1.  They both contain xanthan gum, but are great options if it works for you! NOTE**if you use a brand other than what is listed in the recipe please check the brands recommendation on grams to cup to use.  It varies significantly between brands!

    Gluten Free Chocolate Reese's Pieces Cookies

    This cookie pulls together quickly as it doesn't require chilling before baking! M&M's are a perfect substitution for Reese's for different colors or to keep peanut free.

    Ingredients

    • 2 cups gluten free flour blend (300 grams)
    • ½ teaspoon guar gum or xanthan gym (omit if in blend)
    • ½ teaspoon salt
    • 1 teaspoon baking soda
    • ¾ cup unsweetened cocoa powder (67 grams)
    • 1 cup butter, room temperature
    • ⅔ cup brown sugar
    • ⅔ cup white granulated sugar
    • 2 eggs
    • 1 tsp vanilla
    • 1 ½ cups Reese's pieces

    Instructions

    • Preheat oven to 350° F. Line a baking sheet with a silicone baking mat, or if not using, leave baking sheet ungreased.
    • In a medium bowl, sift gluten free flour blend, guar gum, salt, baking soda, and cocoa powder.
    • In another bowl (you can use your stand mixer if desired) combine room temperature butter, brown sugar and white sugar until well-blended. Add eggs, one at a time, mixing after each. Stir in vanilla.
    • Stir in gluten free flour mixture until well-combined.
    • Add the Reese's pieces and stir gently, being careful not to break the candies.
    • Taking about a golf ball size of dough, shape into a ball and place on a baking sheet, leaving about 2 inches in between each cookie.
    • Bake for 9-11 minutes at 350° F. Remove from oven and allow to cool for 3-4 minutes before transferring to a cooling rack. Repeat with remaining cookie dough. Store in an airtight container.
