    Roasted Cauliflower with Parmesan

    Can I share a little secret with you?  I’m not a fan of cauliflower.  At least not the raw variety.  I don’t care for cutting it up or the way raw cauliflower crumbles to little balls and drys out your mouth.  But stick that cauliflower in the oven with a little olive oil and seasoning and something magical happens.  The cauliflower softens with a slight crunch on the outside.  The salt pitted against the mild flavor of the cauliflower is just amazing.
    I really can not tell you how many times I’ve made this over the past year.  Thank goodness my family loves it too!  It is one of my go-to vegetables.  It pairs well alongside grilled steak or chicken.  It is so simple to make and delicious!

    Get creative with a variety of colors.  Most of the time I use white, but yellow, purple and green are readily available at most of the grocery stores around here at the same price.  The taste and texture are slightly different between the colors.  Yellow was voted the favorite in our house!

    If you like a little more crunch to your cauliflower sprinkle Parmesan on before baking instead of at the end.  You will get little Parmesan chips (as my kids call them).  I like to grate the Parmesan myself from a large chunk.  Pre-shredded cheeses tend to be coated with anti-caking agents and do not melt as well.

    Gluten Free Roasted Cauliflower with Parmesan

    Ingredients

    • 3 lbs. cauliflower florets washed
    • 3 Tbs olive oil
    • 1 teaspoon kosher salt
    • 1 teaspoon black pepper
    • ¼ cup shredded Parmesan cheese

    Instructions

    • Preheat oven to 425 degrees F. Place cauliflower florets on a baking sheet and toss with olive oil, salt and pepper.
    • Bake for 40-45 minutes, stirring once or twice during bake. Remove from oven and sprinkle with Parmesan cheese. Serve and enjoy!
    • Serves: 5-6
