Grilled Lemon & Herb Chicken Kebab
Skewer your favorite fruits and veggies to serve alongside. Some of our favorites are pineapple, zucchini, red pepper, tomatoes, red onion, and mushrooms. If you use wooden skewers, soak them in water for 30 minutes before skewering the meat so the wood doesn't catch on fire.

- 2 chicken breasts cut into 1 ½ inch cubes
- ⅓ cup olive oil
- zest of 1 lemon
- juice of 2 lemons approx.4 Tbs
- 4 garlic cloves minced
- ½ cup chopped fresh herbs of your choice I used 3 Tbs thyme, 3 Tbs parsley, 1 Tbs rosemary and 1 Tbs basil
- 1 teaspoon kosher salt
- ½ teaspoon ground black pepper
- 3-5 Metal or wooden skewers
Combine all ingredients in a non-reactive bowl, such as glass, ceramic, or plastic gallon bag, and toss chicken to coat. Cover and refrigerate for 3-4 hours.
Preheat grill over medium-high heat. Place chicken on a skewer and discard remaining oil and juice. Grill on each side 3-4 minutes, or until chicken is cooked through. Be careful not to over-cook as the chicken will dry out.
