Blue Cheese Spinach Dip

This chunky dip serves well with gluten free crackers or a variety of veggies.

Ingredients

  • 10 oz. frozen spinach thawed and squeezed dry
  • 1 cup sour cream
  • 6 oz. blue cheese crumbles
  • ½ cup sliced green onions
  • ½ cup diced red bell pepper
  • ¼ cup shredded Parmesan cheese
  • ½ cup diced waterchestnuts
  • ¼ teaspoon ground black pepper
  • 1 Tbs lemon juice
  • 2 garlic cloves minced

Instructions

  • Combine all ingredients in a medium bowl. Refrigerate for at least 1 hour, or make one day ahead. Serve cold.
