Gluten Free Waffles

Have extra waffles? Allow extras to cool completely and either wrap in aluminum foil or place in a baggie and store in the refrigerator or freezer. Pop them in a toaster oven when ready to use.

Ingredients

  • 2 ½ cups (375 grams) gluten free flour blend
  • 2 teaspoon guar or xanthan gum omit if in blend
  • 1 Tbs + 1 teaspoon baking powder
  • ¾ teaspoon salt
  • 1 ½ Tbs sugar
  • 2 eggs
  • ¾ cup canola oil
  • 2 ½ cups milk

Instructions

  • In a medium bowl, sift flour blend, guar gum, baking powder, salt and sugar. Set aside.
  • In another bowl, combine eggs and canola oil and whisk until creamy and emulsified. Stir in milk. Pour milk mixture into flour mixture and stir until the majority of the clumps are gone. Set aside for 10-15 minutes.
  • Preheat waffle iron to desired setting. Pour ⅓ cup to ½ cup of batter on waffle iron and cook until golden brown. My waffle iron takes about 4-5 minutes per waffle.
  • Serve immediately to maintain crispiness. If you need to keep them warm before serving, its best done in the oven on a low temperature, such as 225 degrees F. Place the waffles single file on an oven safe wire baking rack. Stacking the waffles will cause them to lose crispiness.
